Blood sugar levels are under pressure from many factors. Here, the main ones are individual metabolism, portion size and what is consumed with bread. However, there is good news — available research indicates that sourdough bread has a more favorable effect on blood sugar levels than some other types of bread.
An important factor has been identified — the glycemic index of sourdough. This indicator has a scale from 0 to 100. It characterizes how quickly the product increases blood glucose levels. The glycemic index of sourdough is about 55, compared to about 83 for bread made with 100% white wheat flour and about 75 for whole-grain barley bread.
Nutritionists say eating sourdough bread instead of unfermented breads such as white or whole wheat can help stabilize blood sugar levels. You just need to stick to a healthy diet.
